Germs in fried sausages

Stiftung Warentest: Germs and lactic acid bacteria found in sausages. Only five sausages scored "good".

(06/24/2010) This is not very appetizing, the Stiftung Warentest found germs in some sausages. Only five of the nineteen sausages tested scored "good" in the test. In all others either germs were found or the taste left much to be desired.

It's grilling time and a sausage shouldn't be missing. The offer is huge, which is why Stiftung Warentest took a closer look at 19 sausages. However, no bratwurst was rated "very good". Only five out of 19 received the rating "good". Everyone else had deficiencies in hygiene or taste. Three different analyzes were made in the test. First, the quality of the meat was tested in the laboratory, the calories measured, and it was checked whether the sausages contained germs, mold or yeast. After these tests, the appearance, taste and smell were also evaluated. The sausages were also grilled.

How did the sausages compare in detail?
The Nuremberg sausages from von Rewe product "Ja", "Howe" and "Schlütter's Echte" scored "good". The Thuringian grilled sausages from "Wolf" and the sausage from "Bratmaxe" also received the grade "good". An organic sausage was surprisingly rated "poor", and the following sausages were "defective": organic grilled sausages from "Chiemgauer", "Gut & Günstig Bratwurst", the fried sausage "fein" from the chain Rewe and the country friend sausages from "Penny" According to the Stiftung Warentest, lactic acid bacteria and germs were found in some sausages at the end of the best before date. You could say that the sausages were already slightly spoiled and could endanger the health of the consumer with nausea and vomiting as well as diarrhea. Real pathogens that cause diseases Fortunately, the taste was not found in many other sausages, so the testers found cartilage particles that damage the Ge taste very dampened. Furthermore, a salty or sour taste was rated poor in some sausages.

How can you test yourself whether the bratwurst is not yet spoiled?
Consumers can hardly tell from the smell or appearance of spoiled goods. Flavors and spices sometimes hide whether the goods are still fresh. Bratwurst should never be eaten if the sausage smells sour and the liquid in the packaging is already cloudy. Consumers should also check whether the best before date has not yet passed. As the test showed, the goods should have a shelf life of at least one week, since at the end of the expiry date, lactic acid bacteria can form. (sb)
